Cornbread Dressing

I hate throwing awaty leftovers–I think that’s why I carry them on my hips. This is a wonderful way to use up your leftover cornbread so that you don’t have to eat it yourself or, heaven forbid, throw it in the garbage.


2 squares old cornbread
1 lemon, juiced
1 tsp pemegrante concentrate
1/4 cup olive oil
6 stalks parsley
2 scallions
1 clove garlic

Blend the ingredients in a food processor and pour on to a green salad.

    Like the carrying the leftovers comment. My husband’s grandmother would call that eating the sins of her children/grandchildren.
