Roasted Garlic Spread

This dish is a great alternative to butter, margarine (yuck) or any other fatty spread. It is low in calories, a natural anti-biotic and cold preventive. It is also a nice way to eat garlic because the roasting rids the garlic of its strong smell and flavor and adds a sweetness. It goes nicely with the parsley pesto which has the bonus of sweetening the breath and removing any remaining garlic odor.

This dish is traditionally served Friday nights in Jewish homes, dating back to the time of the Talmud. Perhaps this is due to the aphrodisiac properties of the garlic.


1 head of garlic
1 tsp olive oil (optional)

Heat oven to 180c / 350f
Chop off the top third of the head of garlic so that the cloves are visible. Place in an oven proof dish and bake covered for 1-1 1/2 hours until the cloves are soft and golden.

Serve with challah and parsley pesto.
