Rainbow Rice Noodles

1 bag black rice noodles
2 tbsp sesame oil
2 tbsp sesame seeds
1 leek chopped
1 red pepper thinly sliced
1 green pepper thinly sliced
1 yellow pepper thinly sliced
1clove garlic, pressed

Cook noodles in 2 liters of water until soft (6-8 minutes). In a frying pan, heat sesame oil, add leeks, stir for 1 minute, add the peppers and garlic and stir for 2 more minutes on a medium flame. Mix in to the cooked pasta, sprinkle the sesame seeds on top. Serve warm.

Serves 4-6
