Super-light Leek Soup

This is an amazing diet recipe. If you need to drop 5 pounds in 2 days (hah!) this will help you to do it. The leeks are a diuretic, meaning that you will just lose the weight in water. If you want to make it an even stronger remedy, than you can eliiminate the soy and miso and just make it with leeks and water.

Ingredients:

2 large leeks, washed well and diced
4 cups water
2 tbsp soy sauce
1 large tbsp miso or to taste

Boil the water, add the leeks and soy sauce and simmer for 5 minutes. Remove from the flame and add the miso.

Serve warm

Note: To add the miso remove a cup of the liquid from the soup and stir the miso into the liquid, then pour it back into the soup.

Cauliflower Quinoa Soup

This spices in this soup turn it a golden color and add a little bit of a kick to the cauliflower. The result is a soup that has a bit of an Indian flavor.

The quinoa in the soup is used as a thickener and is a healthier alternative to the more commonly used potato.

Ingredients:

olive oil
1 onion, chopped
3 cloves garlic, chopped
1 inch fresh ginger root, grated
2 liters water
1 medium sized cauliflower, outer leaves removed and chopped into medium sized pieces.
5 carrots, chopped
1 tbspn cashews
1/4 cup quinoa (can be replaced with amaranth if desired

1/2 tsp turmeric
1/2 tsp cumin
salt
pepper

Heat the oil in a large soup pot. Add the onion and fry on a medium flame for one minute, add the garlic, ginger and spices and fry for one minute more, being careful that it doesn’t burn.

Add the water and bring to a boil. Add the remaining ingredients and simmer for 30 minutes.

Puree and serve hot.

Serves 6-8

Cold Cucumber Soup

The temperature was in the 90’s and the idea of cooking was making me lose my appetite. This soup is made in a blender, takes all of 5 minutes and is a great way to cool down. Almost all of the ingredients contain cooling properties and they allow the body to be able to deal with the heat. The cooling foods here are the cucumbers, mint, soy milk and lemon. Just the recipe to cool off on a hot summer day.

Ingredients:

6 medium sized cucumbers, peeled and seeded (you don’t have to seed them but then the soup is a bit more watery).
1 clove garlic
8 mint leaves
2 branches of dill, bottom part removed
1 lemon, juiced
3 scallions
3 cups soy milk
1 tbsp ground flax seed
salt and pepper

Place all the ingredients in a food processor or a blender and puree until smooth. Refrigerate for 2 hours and serve cold.

Serves 4-6

Note: For a lighter soup, replace the soy milk with oat milk.
