Today I started of making Eazy Zucchini and wound up with this delicious curried zucchini instead. Never be afraid to get carried away in the kitchen!

olive oil
1 leek, well washed and sliced into rounds
7 cloves garlic, chopped
1 thumbnail ginger, grated
2 zucchinis, chopped
1 green pepper, chopped
1 tomato, chopped
1 cup red lentils
1/2 bunch coriander (cilantro)
2 1/2 cups water
chili pepper, to taste
curry powder, to taste

1 potato, peeled and chopped (optional)

Heat the olive oil in a pot with a tight cover. Sautee the leeks until soft and then add the garlic and ginger and sautee for one minute more. Add the remaining vegetables and sautee for 3 minutes until they are slightly soft. Add the remaining ingredients, close the pot and bring to a boil. Lower the flame and simmer for 20 minutes. Remove the lid and boil out any extra water so that you are left with a thick sauce.

Serve warm on a bed of basmati rice.
